As a young man, Spiros Drossos was eager and enthusiastic to learn everything he could about the culinary world. He was lucky to have the perfect role-model and teacher---his father Denny Drossos.

An Executive Chef and Provisions Master on the Greek Cruise Lines, Denny influenced his son and taught him the basics of culinary art. Denny, after several years on the high seas, decided it was time to "dock" in Sausalito, California. He opened a famous fine dining restaurant built on the water appropriately named "The Boat House". After a successful run, he moved his family to Napa Valley and opened an equally successful and famous fine dining seafood house--"The Penguins Fish Grotto".

Spiros worked there, doing everything from the front to the back of the house, including table-side service and m'aitre d. In his early 20's, he ventured off to open his own steak,seafood and pasta restaurant in a historical Carriage House in Napa Valley. He named it, Speero's Restaurant and Tavern. He went on to open 6 more successful establishments in and around Napa.


In 1997, Spiros Drossos decided that it was time to introduce Californians to his version of Chicago Style pizza. After months of searching for the perfect location, he finally found a quaint and modest little place in a town close to Napa Valley named Hercules. How ironic he thought being Greek and all!!!

He quickly became the talk of the town for his delicious and authentic artisanal fare. He used only authentic recipes and the finest meats, freshest vegetables, the best cheeses and his own unique San Francisco Bay area sour dough. It was a hit !!! The stuffed pizza looked like a pastry creation, filled with delicious tomato sauce, flavorful mozzarella cheese and an endless list of fresh veggies and meats. Local residents were hooked and ex-Chicagoans were thrilled to experience a taste of home.

His crispy thin crust pizza's were equally delicious!!! Spiro's signature gourmet pizza's with names such as "Cajun", "Mediteranean" and the almighty "Aphrodite" were quite impressive and attracted hungry people from far and near. His fresh, crisp salads with homemade dressings and sides of complimentary house-made garlic sticks were awesome!!! The specialty sandwiches such as the "Chicago Italian Beef", (another Chicago tradition that includes hot gardiniera and roasted bell peppers), the "Truck stop" (roast beef, bacon, grilled onions, melted provolone on a french roll) and the "Silverado Burger", (a 100% all beef long burger topped with grilled onions and served on a hot dog bun. Yes !!! A hot dog bun !!!) were hip and intense in their flavor and quickly became a staple to many.

True to his culinary background, and to his Greek roots and Italian inspired experience, Spiro managed to combine all of his expertise and create something that has been imitated many times, but never quite duplicated !!!


Spiro is here in Canada!!! He has expanded his culinary expertise and wants US to "Experience Something Better" as he would say.
